Nice Job, some of your analysis isn't correct sir. The standard of 100kg of live Catfish gives 25kg of smoked Catfish. They loose 75kg of weight unless you have demand that doesn't want you to crunch dry it(Special demands), secondly no individual or two persons can smoke 100kg of fish everyday unless you have multiple kiln (oven) of 100kg capacity and more, even at that It takes average of 48hours for 100kg fish to be fully smoked. From sorting, degutting, brimming, folding then smoking. The smoking takes nothing less 22hours minimum. Currently the cost of producing 100kg of live Catfish is about 96k from my own side because the farm I buy from is very far.. effect of transport fare.. 1kg of fish currently is N850 in Lagos. Cost of feeds has doubled. Full bag of charcoal is N2800. I make over 50k per 100kg. I sell 1kg 6k for retail, 5.5k for wholesale.It is very profitable but tedious. No pain no gain.

You can harvest from your farm if you’re a catfish farmer or you purchase if you’re not.

Put them in a container and add the appropriate amount of cooking salt. (This deactivates the fishes)

Place a lid over it to prevent the fishes from escaping. 

2. Clean the catfish:

Once the catfish is completely deactivated, the next step in the processing is to clean it. 

How do you do that?

  • Remove the catfish gills and intestines.
  • Wash in clean running water.

3. Brine the fishes:

Using salt, brine the catfishes.

This is not the same as the first salting, 

While brining, you will mix salt with water and soak the fish.

  • Firm the flesh of the fish and make it less slippery.
  • Draw out old blood and improve the taste of the fish.
  • Preserve the fish by killing and reducing bacterial growth.
  • Add additional flavor to fish.

3. Spice the fish:

This is an optional process especially if you’re selling in an open market and without branding. 

But if you’re branding, this stage makes your own brand taste unique.

You can spice using food flavours. 

All you have to be is smart and creative.

4. Smoke and dry:

Once your catfish is ready for processing, next is to heat the charcoal in the oven. 

If you’re using a gas or electric oven just light it up.

Arrange the fish skin side down on an oiled smoker rack.

Ensure the fire is low for the first 2 hours then increase it. 

Continue smoke-drying until the catfish is flaky and cooked through.

5. Weigh the fishes into units:

When your catfishes are dry and cooked through, you should weigh them.

Usually, they should weigh 250g, 500g, and 1Kg.

You can sell the processed fish at this point or you can pack if you’re branding.

6. Packaging:

For large-scale catfish processors, you can package, and seal them in branded cellophane or polythene bags.

Sealing it will prevent dust and germs from the fish.

Package it according to weights for sale.

If you want to run a successful catfish processing and packaging business that will stand for a long time, here are some tips to abide by;

  • Always use fresh or live fish.
  • Either use a melange (300g-600g) or the table sizes (600g- and above) for processing.
  • Supply what your target market wants.
  • Do not smoke-dry over too much smoke. This will cause the fishes to taste bitter and cause high PAH(poly-cyclic aromatic hydrocarbons).
  • Always clean and remove the oil and ashes in the oven.

For this, you may have to visit a few farms, talk to the farmers, spend time and learn from them how they work. Note down the positive points and where there are also gaps. This will help in establishing a better business plan for your catfish farm, which brings us to our next point.

Land: When it comes to catfish farming, like any other business, you need space. In this case, a vast piece of land, where you can establish one or more ponds, depending on your investment size. Now how to find the right land for catfish farming?

  • should be legally permissible to build a pond or man-made water body
  • should have a proper drainage system.

Building a Pond: After getting the land, the most essential task is to build the pond .

– Remove soft soil and gravel from the site, depending on how deep and wide a pond you require. – Check the soil for any contamination, to keep the fish away from danger or disease. – Determine a drainage system that best suits your plan. – Select the size and shape of the pond you want to build, and get working! A rectangularly shaped pond is economically cheaper and costs less than a square pond.

A pond can be of varying sizes, but one thing it should always be is deep. The depth should not be less than 4 ft. That doesn’t mean pools with less than that depth are not catering quality fish, but if you want optimal growth of your catfish, make sure the depth of the water is between 4 to 6 ft—the deeper, the better.

Building the pond is usually sustainable for large scale catfish breeders, if you are just beginning to step in the market and want to invest less, you could also make use of surface tanks or pools which are far cheaper.

The key is to keep the pool from being too populated. For even better results, manage a better flow of water. A clean flow of water would mean that the fish will eat more, live longer and hence grow bigger. The flow of water is so crucial that if you fill a pool with double the count of fish that it can sustain naturally, and have a good inflow and outflow of water that runs all day long, all the fish will remain the best quality.

This is because dirty water reduces the appetite of catfish by a whopping 60 to 75%. The less food they take in, the slower and stunted their growth will be, resulting in massive loss!

Tip: On average a 50ft by 50ft pond can carry 1800 to 2000 fishes, that grow optimally.

Stock High-Quality Fish Juveniles After you have established a good land and water facility, now’s time to start growing the fish. For this, you will need small baby catfish, also known as juvenile catfish. Some things to look out for when buying juvenile catfish for catfish farming:

– They should be very active – No bodily defects – From the same parent culture

Is catfish a good fish to eat?

When you purchase a catfish culture, make sure that the fish are moving freely around the water. Slow or non-moving fish is a sign of disease or ill health, which will result in poor quality catfish. Next, you need to check their body. Any mark, colour change or weird formation, on the body, is a big No.

Purchasing this culture means the fish will end up being either deformed or stunted. The fish should all be of one colour, so thoroughly check through each juvenile fish before you purchase. They would weigh between 10 to 15 grams each and be 4 to 7 cms in length. The average age of these juveniles should be no more than 7-9 weeks.

Fish feed: The next big thing after promising fish juveniles is their feed. Their growth is highly dependent on what you feed them. There are several fish feeds available in the market, ranging in a variety of sizes and variants. You can get floating fish feed as well as fish feed that sinks.

To begin with, give your juvenile fish small floating feed, this will help you keep track of, how much they are eating. Also, any excess feed, if not ingested, can cause contamination for young juveniles. While floating feed can easily be seen and kept track of, the sinking feed can be hard to keep track of.

How many times have you caught a catfish and wondered what to do with it? Don’t toss those cats back in or let them sit in the back of your freezer. Once you try smoked catfish, you’ll be scrambling to get some more. Today we’ll tell you how to smoke them, and we even give you a tried and true smoked catfish recipe to help you on your way!

What does smoked catfish taste like?

Fried catfish may be the popular method for preparing your recent catch, but smoking it provides a break from the ordinary. You can play with seasonings and even wood flavors for custom creation.

Catfish have a unique earthy flavor that many people dislike. However, the flavor depends heavily on whether you prepare a wild-caught or farm-raised fish and what type of catfish you eat. Channel catfish may taste sweeter, and Blue catfish tend to have more fat. The third type, Flathead, usually tastes best because of their diet of live food.

Like fried catfish, smoking catfish draws out unique flavors, so you may not notice a difference between the types. Besides, is there anything that doesn’t taste incredible after a tour through your smoker? 

The best wood for smoking catfish

One of the biggest decisions to make when smoking catfish is what type of wood to use. We found many different suggestions stating that experimentation may be your best bet. 

Of course, our personal favorite is a custom blend of alder and pecan, though maple is excellent as well. These woods go well with most types of fish, which is why we also recommend them as our woods for smoking salmon . You may want to try some tried and true smoker favorites like apple or hickory.

We also found one recipe calling for a blend of ¼ hickory, ¼ cherry, and ½ apple, but we haven’t tried it yet. If you give it a try, we’d love to hear your thoughts!

How to prepare catfish for smoking

Combing the web for suggestions can reveal a wide array of recommendations. Some people like using a dry brine , some prefer a wet brine, and some like to cook the fish whole with no prep at all.

We wouldn’t recommend going that route for a few reasons, the main one being that you could jeopardize the flavor and moisture of the fish. In short, it just won’t taste as good. Here is the best way to put some prep in your step.

For best results, remove the skins and cut your catfish into fillets, sometimes known as steaks. Try to cut them thinner but at similar sizes to make brining and smoking easier and faster. For a full walkthrough, check out this video on the best way to fillet catfish:

Brining catfish before smoking improves the taste and texture of your meal. It’s easy and only takes a few hours. You need a container that fits all of your fillets and won’t react to the salt mixture. Gallon freezer bags work well, but you can also use glass, ceramic, or plastic dishes.

You can just use a combination of warm water, sugar, and salt for the brining mixture, but feel free to get creative and add spices. There are two ways to brine or cure your catfish fillets.

  • Create a water-based brining mixture, combine ⅓ cup of non-iodized table salt and ½ cup sugar or brown sugar into ½ gallon cold water.
  • Use the salt and sugar mixture as a rub to coat the fillets.

Add your fillets and brining mixture to the freezer bags or container and refrigerate. The general rule of thumb is one hour in the fridge per ½ inch of thickness. For example, if you have one-inch-thick fillets, plan on refrigerating them for at least two hours.

Prepare your catfish using the process outlined above. While your fillets are in the refrigerator, it’s a good time to fire up your smoker. It’s best to keep the temperature steady in the 190°F to 200°F range. Use a smoker thermometer for the most accurate results.

Use a few handfuls of dry wood chips in water, and resist the urge to soak them . for approximately ten minutes. Remember, you can use any flavor or combination of flavors you like. Add the wood chips to the coals in your smoker to produce the smoke.

Before dropping your fillets on the grill, dry them off with clean towels or paper towels. Put your catfish in the smoker and cook for twenty minutes.

While the catfish cooks, it’s time to make your marinade. You can find our favorite marinade in the smoked catfish recipe at the end of this article.

Once your catfish fillets hit that twenty-minute mark, brush on your marinade. Cook for another five minutes, then apply another coat of marinade.

Leave the fillets in the smoker for five more minutes, then check them. You know the fillets are done by gently pressing the edge with your finger. If it falls apart easily, it’s ready to eat.

Smoked Catfish

Ingredients.

  • 4 fillets catfish
  • 2 tbsp brown sugar
  • 2 tsp kosher salt coarse or kosher salt

Glaze Seasoning

  • 1 cup honey
  • ¼ cup diced butter
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • ½ tsp ground black pepper
  • ½ tsp dried thyme
  • ¼ tsp onion powder
  • ⅛ tsp cayenne pepper
  • ¼ tsp garlic powder

Instructions

  • Combine sugar and salt in a small bowl. Place fillets in freezer bags and top with warm water until each catfish is submerged. Refrigerate for four hours.
  • Remove catfish from refrigerator and freezer bags. Rinse with cold water and pat dry with paper towel. Leave on cooling rack.
  • Preheat the smoker to 200°F (93°C). Use smoker thermometer to monitor the temperature. When ready, add wood chips.
  • Place catfish fillets on smoker grates. Close chamber door and cook for 20 minutes.
  • While the fillets cook, make the glaze. Heat the honey in a small saucepan for one to two minutes to bring it to a boil. Add butter and spices. Mix until the butter has completely melted. Remove the glaze from heat and set to one side.
  • After 2 hours in the smoker, your fillets should be ready for the butter glaze. Brush the glaze on the fillets and cook for five more minutes.
  • Apply another coat of glaze and cook for a further five minutes.
  • When the fillets are flaky on touch they are done. Remove from the smoker and wrap in foil. Allow to rest for 10 minutes before serving.

Catfish are one of the only fish that I encounter that I wish were harder to catch. In the tributaries of the Chesapeake Bay, blue catfish account for up to 75% of the fish biomass . Blue catfish are not native to the Bay, but they have established themselves in such abundance that they’re hard to avoid.

If you drop a hook in the water with any type of bait on it , there's a good chance a blue cat is going to find it. Even when trolling, jigging, or casting artificial lures, these predator catfish have a knack for confusing and disappointing you when they smash a lure intended for a different species. The problems, both present and potential, associated with blue catfish in the Chesapeake Bay ecosystem are complex and require ongoing research.

What is not complex is catching a pile of these fish and their palatability. Blue catfish are tasty. I don’t think I’ve ever had one from these waters that was “muddy” tasting, and there’s no shortage of them.

While I enjoy fried catfish as much as anyone else, I find that I usually have more catfish than I can justify frying. This smoked catfish bridges a gap between fish and ham; I use the smoked fillets in any dish that needs what a ham hock would provide—smoke and salt.

Stylistically, this is less delicate cold-smoked salmon and more country-style ham . You can eat it straight up, puree it into a dip , or add chunks to your gumbo or chowder . This smoked catfish can lend a hand to any dish that could benefit from smoked meat.

Other than the fish, there are only two ingredients: salt and sugar. The key to success here is the preparation of the fillets before smoking. The cure will draw out moisture and firm up the meat, as well as give it that salty characteristic. The longer you leave the cure on, the saltier they’ll get.   • Combine salt and sugar to make the cure, stir to mix.
  • Spread about a ¼ inch layer of the cure mixture into the bottom of a wide container, and place the catfish fillets onto the cure in a single layer. Spread the remaining cure on top of the fillets. Refrigerate for 4 to 6 hours.
  • After the curing, remove the fillets and rinse with cold water. The fillets should have lost a good amount of moisture and feel firm to the touch.
  • Pat the fillets dry and place on a wire rack to allow airflow on all sides. Refrigerate uncovered for 6 hours or overnight, or use a fan to dry the exterior of the fillets until a pellicle has formed.
  • When ready to smoke, preheat your smoker to 165°F. Smoke the fillets for 4 to 6 hours, depending on thickness and desired texture. Thicker fillets will need more time than thinner ones. The longer you smoke the fish, the drier it will be.
  • Once fillets are smoked to your liking, remove from the smoker and allow to cool. Refrigerate or freeze if not using immediately.
